Spaghetti Night

Wednesday’s may be a short day at school, but it’s a long day for us. When I’m exhausted and have fussy kiddos with very hungry tummies, I step into my pantry, grab some dried pasta, a big can of organic tomatoes and reach in my fridge for either Sweet Italian sausage or fresh mushrooms, whichever I happen to have on hand. Dinner is ready in less than 30 minutes and everyone is comforted, happy, and full.

Spaghetti with Meat Sauce

Ingredients: 

1 pkg dried Spaghetti

1 lb Sweet Italian Sausage

1 lg can crushed Organic Tomatoes

1/2 Sweet Onion, diced

1 tsp dried Italian Seasoning

1/2 – 1 tsp Garlic Powder

Salt and Pepper to taste

Method: 

In small Dutch Oven or Cast Iron Skillet, brown the Sweet Italian sausage over med high heat about 10 minutes. To that add the sweet onion and saute about 3 minutes more. Add in the crushed tomatoes, dried Italian seasoning and Garlic powder. Simmer until the tomatoes are cooked through and have reduced slightly, about 10 minutes. Turn off the flame, taste and adjust seasoning as needed.

Cook pasta according to pkg directions. With a spaghetti server, scoop the pasta out of the water and drop into the sauce. Toss until all the spaghetti is well coated. Serve immediately.
